Hello, Ava J’zs foodies! Today, we are going to be preparing my taco meatballs!

INGREDIENTS
  • 1 – 3 lb ground meat of your choice (beef, chicken, pork, or turkey)

  • 1 – 2 packages of taco seasoning

  • ½ cup Ortega taco sauce (or your favorite brand)

  • 2 eggs

  • 1 cup of oatmeal

  • 1 8oz package of fiesta blend shredded cheese

  • 1 bundle of scallions, chopped

  • 1 tomato, diced

  • 14 oz Daisy squeezable sour cream

GUIDE / INSTRUCTIONS
  • Preheat the oven to 400°F.

  • Place ground meat in a large bowl and add taco seasoning.

  • Add taco sauce, 2 eggs, and 1 cup of oatmeal.

  • Mix everything together; I suggest using gloves to mix by hand!

  • Shape mixture into large, evenly sized meatballs and place in an oven-safe pan.

  • Bake for 25 – 30 minutes at 400°F.

  • Remove from the oven and sprinkle fiesta blend shredded cheese evenly over the entire pan.

  • Add chopped scallions evenly over the meatballs and cheese.

  • Place the pan back in the oven for 15 – 20 minutes until the cheese melts.

  • Remove from the oven and add diced tomato, sour cream to taste, and more taco sauce if desired.
