Preferred cut of chicken (this recipe uses drumsticks)
2 15oz cans of cream of chicken soup
1 green bell pepper
1 red bell pepper
1 onion
Rice (cooked)
GUIDE / INSTRUCTIONS
Preheat oven to 350° F; lay chicken in pan and bake for 45 min.
While baking, slice the vegetables and prepare rice (if desired).
Remove from oven. Preheat oven to 375° F.
In a bowl, add 2 cans of cream of chicken soup (save cans). Pour some juice from baked chicken into the bowl and whisk until smooth.
Add sliced vegetables on top of the pan of chicken.
Pour sauce evenly over pan of chicken and vegetables.
Fill 1 cream of soup can with cold water and add to bowl. Stir around to get remaining cream of chicken and pour into pan.
Cover the pan with foil. Put everything back in the oven for about 25 – 30 minutes.
Serve over rice.
